Kaldi was a shepherd who one night noticed that his goats were wandering instead of sleeping. He identified the berries and leaves of the unusual plant they had eaten; the next day he roasted the seeds and ground them, creating the first coffee infusion.

Coffee is a seed from a plant in the Rubiaceae family. The two main coffee species are Coffea Arabica and Coffea Canephora (or Robusta). Arabica accounts for about 70% of the market and Canephora for about 30%.rnrnFurther commercial differences depend on how the bean is processed.rnrnDid you know that the coffee bean is green?

Coffee is grown in tropical regions of the world, between the Tropic of Cancer and the Tropic of Capricorn, and the world’s largest coffee producer is Brazil.rnrnCoffee can be harvested manually by picking or stripping, or by mechanical harvesting. Picking means selecting each ripe cherry by hand. Stripping removes the cherries from the branch with less selection. Mechanical harvesting uses machines. Manual methods allow greater selection and can improve the quality of the harvested coffee.rnrnCoffee can be processed dry (natural coffee) or with water (washed coffee).
